Since I bought this ice-cream maker a few months ago, Ive been making many different ice-creams, frozen yogurts, and sorbets. I even tried to make a banana ice-cream I saw on the Food Network from fresh bananas but unfortunately that didnt work too well.
The other day I was thinking about the coconut ice-cream I had when I was a kid (the company was called Yan Jim Kee for those of you whore old enough and from Hong Kong). I thought to myself: wouldnt it be nice if I can make something that approximates it? I searched the Web for recipes and didnt find any straight forward ones. So I simplified and averaged a few that I did find and heres the result. Trust me, it tastes great!
| 500 ml |
plain (or vanilla) yogurt |
| 1 can (400 ml) |
coconut milk |
| 1/4 cup |
sugar |
| 1-1/2 tsp. |
pure coconut extract |
| 1/4 cup |
sweet desiccated coconut |
Mix everything in the blender until sugar dissolves (about 2 minutes). Cool in refrigerator. Place in ice-cream maker and follow the manufacturers instructions.
